A favorite cut among many cooks. It includes both the rich, beefy sirloin on one side and the leaner tenderloin on the other, separated by the unmistakable T-shaped bone. Great for grilling or barbequing!
Produced by cows raised on Walnut Ridge Farm. These cows are sent to the butcher at approximately 650 to 850 lb hanging weight, which makes the meat deliciously tender. Most of our beef is dairy crossbreed. All of the cuts are vacuum sealed for optimal freshness.
